I find it endlessly fascinating that a virus has no motive, no agency, no goals. It's just a bunch of molecules that happen to form a sequence of instructions that a cell cannot help but to read. (And in a way, that is true for our own organism as well.)

No such thing! Entropy is simply a measure of the possible microstates in a system. Negentropy would mean the non-measurement of the possible microstates in a system. Which, to me, is pretty meaningless. Though I guess it could simply be *ignorance* of the number of states.

"Negentropy" is like saying we need a theory of dark to describe the opposite of light. No, we don't. Dark is the absence of light. A theory of light tells us everything we need to know about dark. Likewise, entropy tells us everything we need to know about organization.
