Simple: they found a very elegant grid-like pattern in which we can pack the largest possible number of oranges into an 8 or 24 dimensional fridge. Now they wildly speculate if building blocks of our universe might slosh around in 8d and 24d because there is such a neat grid. :)

Yes. 3d oranges would be too flat to bounce off each other in 8d, in the same way as 2d shapes do not have a volume.
