For one thing, your long term memory formation has not properly shut down. Depending on how deeply you sleep, larger parts of your brain will decohere, until your identity construct disappears. Apparently it's necessary to do renormalization passes on the brain under decoherence?

I'm not sure about what renormalization is. It feels like my brain is being impeded from shutting down during sleep, and then I wake up feeling tired. Somedays it feels like my gut becomes irritated and this prevents my brain from properly powering off at night. Very weird feelin

Did you check for apnoe? Otherwise, you may want to see an endocrinologist and look into nutrition related disorders (like Celiac), but you probably already did?
