I am realizing new discoveries are increasing and textbooks are decreasing the entropy of information.

I like to think of it as a Bayesian model for the rate of new discoveries. Where the prior can be either based on known possibilities (reduced entropy) or based on unknown possibilities ( increased entropy).

I agree: The discovery of an increase in the space of possibilities is often much more significant than a reduction of that space. It is also more rare.

Almost all discoveries are of this type. It is very rare that something happens that absolutely everyone considered to be impossible.
