Chances are it's not "something" in the food but the food itself. As comfort improved, energy income/expenditure ratios grew, along with morbidity and mortality from cardiovascular diseases and some forms of cancer. We, medics, unfortunately failed miserably in preventing this.

I find it unlikely that we evolved to be unable to deal with our food. We probably just have difficulty with alien foostuffs. They may throw off our regulation in all sorts of ways.

In the same time the daily intake of calories and the intake of simple carbonhydrate per day grew. Theres evidence, that reducing calories has a big effect on increasing lifetime and theres also evidence that suggar is bad as well. Causality?
