In five dimensions, you can already construct a regular lattice with 40 neighbors.

Do you refer to a squared lattice? If so, do diagonal connections count as neighbours? A 5 dimensional cube {-1, 0, 1}^5 has 81 points, its central point (0,0,0) would have 80 neighbours, 10 direct and 70 diagonal ones.
