Unfalsifiable isn't the point. Non-explanatory is. All those other classes of theory have good (hard to vary) explanations.

It's a good explanation for non-humans. But explaining differences in human behaviour via genes quickly runs counter to human universality.

I don't think that humans are universal out of the box. It typically takes many years of careful deconstruction of default settings and cultural local minima (usually facilitated by an intellectual environment that takes several generations to build) to become somewhat universal.
