Whatever else you do, don’t put your phone number on your Gmail account (even as a ‘recovery number’). Use an app or security key for 2FA
if you have a recovery app and turn on the security codes (the ones you print on paper), it should let you remove SMS

that’s really weird. Can you go back to your 2FA settings and verify you removed the phone? Last step should be red REMOVE button
