Whatever else you do, don’t put your phone number on your Gmail account (even as a ‘recovery number’). Use an app or security key for 2FA

Have a recommendation for a 2FA app?

what if I'm not on Verizon? Jokes aside, is it possible to hijack a prepaid phone nr which isn't registered online?

two issues: one is it’s fairly easy get any phone number reassigned to your own phone, two is many phones show SMS on lock screen

What of the 'Google Prompt' option on my Nexus? That seems similar to an authenticator app (more so than SMS 2FA)https://9to5google.com/2016/06/20/google-prompt-two-factor-authentication/ …

much better than SMS, not as good as security key. Only difference from authenticator app is that it requires talking to server
