what's the opsec on using a Google Voice account (on a throwaway email/account) to plug in a number that isn't tethered to all the things a home/mobile account might be? I realize that I already flunked this because the main email account I'd be shielding on this is still Gmail

I can think of a use case: when they don't need your phone number for any practical reason, but the input form validates that you've filled one in anyway, and then they do dumb things like make you 2FA off of voice calls (insurance companies do this)

You've highlighted an important point, though, that those of us who think we're all very protective BUT ALSO we're nice people who sometimes are happy to give things away: They can ask for a phone number, but be in the habit of never providing it.

I've had my phone number plastered over the internet (including profile here) for years so I find this whole line of discussion a little precious. You can protect yours like the nuclear codes but life is quite livable the other way, too
