Another food question: in France, the role of Mexican food in the US (delicious mountain of hot, fresh ethnic food you can buy at 3 AM) is filled by Moroccan restaurants. What cuisine fills this niche in other countries? Excluding kebabs to get more interesting answers.

Worth noting that even though kebab shops dominate this space in the UK a lot of what they sell has nothing to do with kebabs: for a while there my go to order was chips and cheese in a naan bread with garlic sauce and mustard.
