I'm going full sourdough because my local grocery stores don't have yeast. https://www.theverge.com/2020/3/31/21199708/yeast-diy-baking-covid-19-shortage-make-it-yourself-bread …

Everyone is gilding the lily. Or stuffing it with olives! I have never tried enriching this dough, I just put butter on the product and eat far too much of it.

Uh, we're going sourdough because there is no yeast in the store

ironically, a situation where "then let them eat cake" would be a good answer

But sourdough is really tasty. It even makes crepes and waffles better! Plus you can name it and feel a little less alone because you have a warm friend in the corner.

I'm less of a fan of sourdough, personally, tho my family would be happy. But I'm hoping to avoid all that, if my order for yeast comes through. A one-pound bag of it cause I couldn't actually find it in smaller quantities. I'll offer excess to neighbors...

Do you have a good resource for troubleshooting? I am still having a giant bubble/void under the top, and difficulty slicing the loaf before cooking (both may be related).

How long are you rising? I'm ending up with a pretty homogenous loaf with a 16h risehttps://twitter.com/ironydisliker/status/1243691540934885376 …
