What are some good national proverbs for the concept "the first try doesn't count"? In Russian, the saying is "the first crêpe is for your relatives (первый блин комом)", since the pan is almost never warmed up right.

actually the old version of this proverb was "первый блин комАм" - the first crepe is for bears, ком used to be used for "bear" in some old northern dialect. later it was transformed to more comprehensible to others "комом" losing its meaning
