Maybe, lacking empathy may not lead to universalising our own experience or perspectives; but without empathy, I doubt we would ever get beyond our own experience and perspectives.
It's also the case that there are dangers in centering empathy. Suppose, for example, we find it much easier to empathize with people we take to be like ourselves rather than people we see as being wholly other. That could screw up moral objectivity, etc.
