I've got a bloody PhD, & I can't for the life of me figure out how to open the salt!

You might need to use the handle end of a small spoon or fork.
I've been jabbing at it with a knife! Maybe I'm just very weak! 
Maybe you are pressing on the wrong thing? It is the tab opposite the place with the small little holes. Alternatively you can force the lid off. But if you do this it won't stay on properly in future so would need to use a salt shaker.
That's the tab I've been targeting! 

It seems to be stuck fast.
The other possibility is I'm utterly hopeless. I've only just discovered that if you stick salt on food, it can taste a bit better!
