I’m curious: what is the defining distinction between white mainline Protestants and white evangelicals?

why didn't you survey non-Christian groups?
-
Americans of many religious groups are included in the full sample; specific groups shown are the ones with enough respondents in this survey with the statistical power to be analyzed separately.

The only religion polled is Christian? Are any of those 'unaffiliateds' actually some other religion? (Apparently 'not christian but something else' is like less than 10% of the total population. But.)

"Unaffiliated" includes those who identify, religiously, as atheist, agnostic or "nothing in particular." Americans of many religious groups are included in the full sample; specific groups shown are the ones with enough respondents in this survey to be analyzed separately.

"Unaffiliated" wins the day. It appears we atheists and agnostics practice what the others preach.
