Alright, so due to Covid, for the first time in my life, the turkey prep falls to me. So: ideas on doing it for a very small group (just our immediate fam)? Should I just do a roast chicken? Any hacks/tips appreciated in comments.

What is spatchcocking?

You cut along the backbone of the turkey (or remove the backbone) & lay it “flat” skin side up to cook. Recipes call for a shallow pan; beware as there will be lots of oil splattering and yes, my oven caught fire the next time I used it.
