The thing that gets me is how they seem to suggest friends who I know but are not connected to anybody else I know!

How come they suggest I friend someone who happened to be my saxophone teacher, we don’t have similar friends, how do they know??

Are you both in the same place at regular times? Use their wi-fi? For mine, geolocation is far more likely than audio surveillance.

I haven't had any contact with them for probably 5 years. They've also suggested I friend another teacher I had even further back.

My guess is that FB have geolocation data going back years and they cross match regular overlapping geolocations to make friend suggestions
