      @roach the interesting thing is that it is a good thing for cooks not necessarily restaurants as food can cook from home. @dcurtis

      @roach a kitchen is a kitchen. You do not need the overhead of waiters and high cost of a central location to be in business. That's great!

      @roach re: inspection, I agree. I think the fact you do not need to be in a central location to serve it changes the economics massively.

      @roach yup. I also like the idea of specialisation. You don't need to offer many types of food and beverages. Focus and produce in bulk.
