My gut feeling tells me that a lot of people would like to run Jupyter locally but either installing it on a regular computer or side-loading with Xcode is outside their comfort zone. If you could make this as easy as downloading an app you would open this up to lots of people.
Is this something you or somebody else could publish?
There are a lot of people that would like this on their iPad but are not the kind of people to side-load.
