Cryptographic and most practical consensus protocols are based on doing things with astronomically high probability not with certainty.
Algorithms can solve many problems with asymptotically high probability that are provably impossible to solve with absolute certainty.

Many? I haven't seen many outside of cryptography. Lot of what ppl call 'probability' as it pertains to message arrival order is a heuristic
