If I do a job in 30 minutes it’s because I spent 10 years learning how to do that in 30 minutes. You owe me for the years, not the minutes.

From his perspective, he owes you for the 30m, but since it took you 10y to learn how to do something in 30m, you charge him what you feel is right (e.g. charge $600 for 30m of highly skilled work). If you frame it as "you owe me for 10y of training" you will not get clients.
tl;dr this is why we should have free markets instead of people engaging in political debates, trying to convince politicians of how much they deserve to earn.

The free market will also price the difference of skilled vs unskilled labor. This way we know what the 10 years are worth in terms of job

Free markets tend to skew towards subsistence level wages for unskilled labor. We shouldn’t allow that to happen.
