Falafel is Arabic and Turkish and couscous is Moroccan. There is no true Israeli cuisine.

There is no "true" Arabic cuisine either. If you want to get technical about it, couscous is a Berber dish and there are countless variations within Maghreb alone. Not to mention how heterogeneous the whole of Arabic cuisine is beyond that.

Mansaf is from the Arabian peninsula as is sayadyah, mussakhan, kibbeh and many more. The Saudis, Iraqis, Lebanese, Palestinians and Syrians have recipes from thousands of years ago.
