My partner always tells the guests, look at this beautiful garden that we have made. I find the use of 'we' very questionable here. 'Dig thirty holes here and twenty there. You won't come to the house until you are done.'

Climate in Arizona is much like Iraq or arid parts of Iran. I'm from Shiraz so we get the four seasons and the plants are very much similar to what I get here except the fruit trees.

In spring you get white truffles the size of a large apple. They were expensive back then, a kilo was running around 2-3 dollars. But at some point I managed to buy 10kg of white truffle and it was like 40 bucks. I think we consumed more truffle than the entire NYC in a year.

We started to brush them as this is the proper way to not waste this gem, but we got tied and started skinning them like carrots. At some point we we were adding truffle into everything imaginable, quail egg omelette, pizza, stew.
