Sweet signals sugars; umami, amino acids, and salty flavours, electrolytes. Those decadents among us who enjoy bitter and sour flavours are ignoring primal signals for poison and unripe or spoiled foods.

You don't know the extent of the evolutionary conspiracy. Most animals get screwed when they eat sweet stuff because they are wired to see sour as acidic and toxic. Salty and tart dishes in human cooking are the extensions of evolved ion channels. more reliable than sweet dishes.

We have better receptors to detect rancid from just tart than sweet from fetid.
