does the debug scripts have anything interesting? I remember in your GTA 3 vid you guys uncovered a lot of stuff in the mobile port.

Not sure, I haven't tested them yet. I know that there is at least a mission select screen.

This is a tool used by the developers to create the localization files, aka the translations. The GXT file extension is used by Rockstar to save the dialogue lines, help texts, and more.

I can't remember how the subs are stored in old GTA games but if the format is different from Bully, it probably won't work.
