All they can do is get different guys in to finish the job and do it well. It boils down to this: renovations are going to take longer than expected since they have to re-do a lot. There's no damage to the structure of the house or anything

If the employee is holding the customer as collateral for anger against the boss, he is probably angry over something petty. I think that is grounds to sue

There is nothing *I* can sue over. Owner's business is his own, but he's definitely mad at the labour lol. I can only demand that the work is re-done, properly, according to contract and standards. It's just going to take weeks more than we all hoped.
