It would be "advantageous" for the virus to evolve less harmful variants. Better (in Darwinian terms) to be stealthy and not suffer a massive backlash from humans.

Well, the reasoning works, but only if there *is* a massive, exterminating backlash. It doesn't work if we just sit there and say "la la la it'll evolve to be harmless"; we have to behave as if it were going to continue to be dangerous. That means going for extermination.
