Given the Earth's gravity; how does deployment testing work on Earth reduce the failure in 0 gravity Space? I imagine the weight of the arms and shields make it easier to assist in the unfold procedure under the Earth's natural gravity pull. I can't wait to see images from JWST!

Yes, look closely at 0:15 you will see a yellow bracket/cradle during the deployment with circular counter weights. There is another cradle symmetrically opposite of the first.
