The solar system includes objects under the gravitational influence of the Sun, ie the Oort Cloud. I'm trying to wrap my head around the total distance traveled from the sun's POV. Are the spacecraft traveling in a straight line away from the sun or continuing to orbit, like an outward spiral?

It's mostly straight. Sideways motion in the orbits of objects at that distance isn't nearly what the outwards velocity of the probe is.
