Quick question: why would I still want to deploy nodejs apps to GAE flex, provided I don't have any need for custom runtime?

If you have something that works, and you are happy with the cost... maybe no need for churn. In general, if you don't need a custom runtime I would move to standard

I'm curious: How does this differ from the previous deployment methods/experience? Totally unfamiliar with deploying Node.js to GAE / GCP

App Engine Flexible can't scale to 0 is one of the biggest differences. Also much faster deployment times. App Engine Flexible allows you to include a DockerFile though, so you can extend the runtime if needed. One could progressively move to flex when standard isn't enough.
