There is a Chrome add-on that works pretty well to "bring back" the old UI. Once I get home I can look it up again. I also retweeted about it a few days ago.

It's pretty jarring. Good minimalism takes a bit more effort. In some cases the poor space use isn't noticeable. For example, if the browser isn't maximized, but instead is only about 2/3 the width of a screen. Or if you happen to be using a screen flipped 90 degrees.
