In my typical over-think-things way, I'm designing a system to distribute water from the barn to 4 stalls, 2 run-in sheds, berry patch, wheat patch, pig wallow, pumpkin patch, and an orchard, using runs of buried PEX, multiple manifolds, brass ball valves, pressure reducers...

Yes, have considered this. Intend to do so in "road pasture" and maybe "cross pasture". Even have some IBC totes on hand. Do NOT intend to do so for things closer to the barn. PEX isn't that expensive, and it'll be nice to not have to refill cisterns.https://twitter.com/BornProblematic/status/996494203986284547 …

9/ The entire system will be disconnected around 15 Nov and drained. It will not operate when freezing weather is possible. https://twitter.com/Cloudswrest/status/996502138787262465 …

Have you considered raised cisterns? Float valves to keep them filled, height (+ reducers if necessary) determines pressure. You could have one near each project. No worries about well pump pressure &c.
