I Have Researched This™. Answer: sap alone is far too low sugar, but syrup CAN be fermented. That said, people who tried it say that it does not taste as you'd expect and is best described as "bad". 3 parts bourbon, 2 parts lemon juice, 2 parts maple syrup, stir very well, serve over ice. Some people call this a Maple Leaf. I call it ambrosia.
