One pig entirely disassembled. Bones in oven roasting for stock, head in pot simmering for headcheese. Belly to be seasoned for bacon (not done yet). Next up: help wife salt, wrap, and hang two hams for aging. Tomorrow, do the other pig.

2/ belly rubbed down w cure, bones out of oven and into stock pot, water in head has been poured out and replaced, all tools and work surfaces scrubbed down, kitchen counters clear. Ooh rah. Now, rest before doing the same again tomorrow.
