I'd love to get my hands on some good beef tallow too for a decent price. McDonalds french fries used to be fried in that, and they were NEVER the same after they switched to veggie oil.

We fry most things in pig lard (Thanksgiving stuffing? Onions and celery cooked in lard!). Assuming that we FINALLY get a cow this spring, we'll render tallow next fall / winter.

Yum! Like any good Southerner, I save all my bacon grease. Which is fine for some savory stuff, but you don't want bacon flavor in everything.
