3/ not insulated, so they can't abut cabinets or walls, they have pilot lights not piezo lighters, they require commercial fire suppression

4/ so instead of paying $2-4k for a commercial range, smart move is actually to pony up 3 or 4x for a 'prisoner's version.

5/ best hack I've figured out (and what I'll prob do) is not pay $12k for 60" double prosumer range/oven, but get two 30" at 3 - 3.5k each.
