I am making stock all the time. Have massive 10 gal pot. Put 5-10 roasted chix carcasses in there + 1-2 onions per carcass, simmer 24 hr

My wife complains about my constant stock-making. Don't forget celery, carrots, thyme. Crack bones for marrow & add Apple Cider Vinegar.

tried egg white once, don't bother anymore I strain through mesh collander, no further. Cloudy / peasant style is fine w me.
