1/ I knew using McIntosh apples would result in flat, insipid cider. That was part of the plan: a $60 test run. First 5gal carboy: yep.

2/ So...racked it to a new carboy off the lees, poured in a vinegar mother from some old apple cider I've got, covered neck w cheesecloth.

3/ If all goes according to plan, in ~8 weeks I'll have more or less a lifetime supply of vinegar. Top it up every year, and good to go.

4/ We'll still be buying wine vinegar...at least for another 3-4 years when the vineyard will start bearing.
