1/ I processed one turkey carcass and a dozen or more chicken carcasses into stock the other day. 19 quarts = 3 pressure canner loads.
@cwage 1 turkey, ~12 chickens, ~16 or so onions. Roast everything at 425° till brown, cover w water, simmer for 24 hrs.
