Eating home grown potatoes makes me realize that potato VARIETY matters a ton. Must research this.
@Spivonomist inadvertently grew all waxy this time. Not best for roasted potatoes.

@MorlockP I'm not sure what'd work in your soil, but 1/3 Russet 1/3 Yukon Gold 1/3 Red is typical in my kitchen. Also yams. YMMV. - Show replies
