Wait, realized I must be wrong. Made 20 quarts just the day after Thxgiving. So must have 40-50 quarts.

@random_eddie in general I think 1 chicken (plus 1-3 onions per chicken carcass) -> 1 quart, which makes a pretty darned rich stock.
