1/ went out to dinner w wife a few days ago and got pretty mediocre service not malevolent ; just incompetent ...and I've seen more and more of this over the last 20 years. I assume that a 105 IQ is more than enough to serve food competently so I've got a theory >>>

Also the anonymity of the big city. If I go to a new-to-me restaurant in San Francisco and the service really sucks, I won't feel terrible about not tipping, or giving a low tip. I'm much less likely to do that to restaurants in my suburb.

In the city people going to college or trying to build an acting career need flexible work schedules. So you get more competent people waiting tables. However, there has absolutely been a massive decline in the past decade there too. I think your theory holds true.

basic competence can usually be accomplished with conscientiousness. That might be what's missing.

We have to face up to the reality that thanks to technology an abundance of "real" goods (food, fuel, etc.) can be produced for everyone with just a tiny amount of the working force. Fake jobs exist so that the others "can play too"
