Bring back factories so ppl who can't remember a dozen orders can work with dignity in a plant making american products. the tasks are more repetitive and physically taxing, but it would open roles in the service/retail fields for midwits with email jobs

I disagree with your theory, as it relates to waitresses. I think is a problem that is directly related to your problem of finding a decently run business or farmhands in your area. The rest of what you wrote I agree with. There is a massive made up part of the economy.
