It’s always interesting seeing U.S. companies try to import bento culture (variety in lunches through a choice of a large number of pre made SKUs) and Japanese companies trying to import a culture/business model of per-order customization.

so how does the US customization approach differ? doesn't the supplier need to have something like sku's in order to customize? or is it like there's a block of material and it is literally lathed differently?

So when I say customization think like a Subway sandwich, where you are preparing an order with contents that are unknown until seconds before the transaction.
