Seafood should only ever be fresh. Especially shellfish. On the bright side, I lost over 10 lbs in a week earlier this year when I failed to heed this advice.

“Sushi-grade” means “has been frozen”. So whether you’re in a port or inland, it has to have been frozen. Lots of reasons why inland sushi is inferior! But freshness is probably not it.
