There are good bulk deals to be had on perishables if the supermarket starts getting close to the sell-by date and they drop the prices to clear shelves. And restaurants buy so much they have negotiating power. But yeah, not worth it for the hassle of a communal kitchen. blargh.

At the point your "communal kitchen" is competing with a restaurant, it's a restaurant. Might as well just pay staff to run it.
