        So maybe kitchens should be taxed instead of subsidized relative to street food.

        maybe it changing from place to place, but in italy i am pretty sure kitchens are *way* smaller than they were 100 years ago. And in general i don't know how it's possible to claim kitchen sizes increased in countries which experienced migration from rural to urban areas.

        I would say that this partially depends on technology. In an era where cooking involves actual fire, the labor, smoke mitigation, and risk to something going wrong is higher than for an electric or gas stove, so it makes less sense to cook in a third-floor walkup in Ancient Rome.

        right! this is congruent with my argument that people WANT kitchens and will have them if they can afford them better fire safety technology lowers the cost higher technology increases wages both work together -> more kitchens
