2/ We are wired so that agency is important to us. More and more in my circles are expressing their desire to not be an "urban bugman". That's one subculture's take on agency, but in other corners it takes the form of "I do my own laundry, I'm not SPOILED and sending it out".

3/ my thesis predicts that if people are given a job with more agency (which is also perhaps more mentally exhausting) they are more likely to outsource high agency cooking, but if given a job w less agency, are LESS likely to outsource high agency cooking

What is "agency"? It is the same as autonomy, independence, or power?

I think the first two options you present are very similar, and, yes, that's what I'm getting at. Power is certainly related, but indirectly I think, bc most high autonomy / independent jobs are either upstream or downstream of power (not all, tho, e.g. cab driver).
