Sauce status is awfully context-dependent, though. Mornay is high status on beef, but put it on pasta and whoops you just made mac ‘n cheese, you prole.

true true also, as w Paul Fussell's thoughts on salads, often less is more in a sauce. E.g. a steak basted with butter might be higher status than a steak "Oscar style" with crab, or loaded down with blue cheese (even if the blue cheese tastes amazing)
